- 2 5kg beef short ribs bone in cut into 3 rib sections see tip
- 1 4 cup olive oil
- 2 carrots peeled and chopped
- 2 celery sticks chopped
- 1 red onion chopped
- 2 tomatoes chopped
- 3 cups 750ml cola
- 4 cups massel beef style liquid stock
- 3 4 cup worcestershire sauce
- 1 4 cup apple cider vinegar
- 3 bay leaves
- 1 2 tsp chilli powder
- creamy polenta to serve
- blanched cavolo nero to serve

- preheat oven to 160u00b0c season ribs with salt heat oil in a large ovenproof saucepan over high heat brown beef ribs for 6 minutes turning on all sides then remove from pan
- add carrot celery and onion to pan and sautu00e9 for 5 minutes or until onion softens stir in tomato and cook for 2 minutes add cola stock worcestershire sauce vinegar bay leaves and chilli powder and bring to the boil add ribs and return to a rapid simmer
- cover with a lid and braise in oven for 2u00bd hours or until meat is very tender and falls away from the bone remove ribs from sauce
- simmer sauce rapidly over high heat for 20 minutes or until reduced by half scoop off and discard top layer of fat return ribs to reduced sauce and heat through serve with creamy polenta and cavolo nero
